I am in charge of PR for Soba and Sakaki Enshizuku Minami-Shinjuku.
With the continuing cold weather at the bottom, seasonal products are changing from winter to spring.
How are all of you doing?
Our restaurant is a izakaya where you can enjoy the "deliciousness" of the San'in region.
In this issue, we would like to introduce Wariko Soba, a local dish of Shimane.
◆Try our "Wariko Soba", Shimane's soba noodles! ◆
~Served in three tiers~.
The characteristic of Wariko soba is that it is thirst-quenching and has a good buckwheat flavor.
Wariko soba is served in a round, vermilion bowl, stacked in three layers.
In the Edo period, soba noodles were carried in square stacked boxes for eating outdoors,
It is believed that this round shape was changed because it was difficult to wash.
There are two ways to eat wariko soba. The first is to sprinkle yakumi (condiments) and add just the right amount of cold dipping sauce.
When finished, pour the remaining dipping sauce from the first tier into the second tier and serve,
Pour the remaining sauce into the third tier as well and serve.
After drinking, be sure to finish off your meal with a delicious Wariko soba!
~Matsue is famous for its shijimi.
Matsue is also famous for shijimi clams caught in Lake Shinji.
We, of course, also offer a variety of excellent products using shijimi clam.
It is perfect for both drinking and eating [shijimi tsukudani],
The taste of the egg is irresistible [shijimi dashi maki],
The last drink of the day was the "shijimi clam soup.
You will be soothed by the sensation of being absorbed into your body after drinking it.
