Nodoguro is one of Shimane's well-known specialties, and is famous as a high-end fish due to its small catch.
Our signature dish, "Braised bluefin tuna, 3,025 yen (tax included)" is made from such bluefin tuna,
This is a must-try item when you visit our restaurant.
The "nandoro shoyu", a thick, rich, sweet soy sauce favored in Shimane, Yamaguchi, Kyushu, and other regions, is used to make this dish,
We spent a lot of time and effort to cook them slowly.
The fatty meat and the sweetness of the nectar of the soy sauce combined with the flavor of the meat make for a sumptuous simmered dish.
